- 1 Tbsp roasted garlic oil
- 1 Tbsp Parmesan (grated)
- 1 slice Rye bread (day old)
- 1 cup Vegetable broth (heated)
- Tomatoes (halved)
- fresh thyme

Preparation steps
1.
Preheat oven to 400 degrees F/205 degrees C.

In a medium bowl, combine the oil and Parmesan.
3.
Cut the crust from the bread and cut into 4 equal triangles.
4.
Add the bread and gently toss until well coated on all sides.
5.
Place the coated bread on a baking sheet and bake until lightly golden brown, about 10 minutes.
6.
Slide the triangles onto a skewer and serve with broth. Garnish broth with a roasted tomato and fresh sprig of thyme. Serve immediately.
