- 1 shallot
- 2 Tbsps butter
- 2 Tbsps flour
- ⅞ cup Beef broth
- 200 milk
- 1 bay leaf
- salt
- freshly ground peppers
- Nutmeg
- 3 Tbsps cream (30% fat)
- 1 tsp lemon juice

You may strain the sauce before finishing off with the cream and lemon juice if you wish.
Preparation steps
1.
Peel and finely dice the shallot.
2.
Heat the butter in a saucepan until foamy. Add the shallot and saute until translucent.
3.
Stir in the flour. Continue to stir and saute until the flour begins to lighten.
4.
Whisk in the broth and the milk. Add the bay leaf. Season with nutmeg, salt and pepper.
5.
Bring the sauce to a boil while stirring. Simmer, stirring occasionally, for approximately 15 minutes over low heat.
6.
Add some cream and lemon juice to taste.
