Ingredients

For the meat sauce
1 onion
2 cloves garlic cloves
1 carrot
3 sticks Celery
5 ozs Mozzarella
¾ cup Parmesan (freshly grated)
3 Tbsps olive oil
1 cup ground Pork
1 cup ground Beef
2 Tbsps tomato puree
¼ cup Red wine
2 cups chopped Tomatoes (tinned)
salt
freshly ground peppers
For the béchamel sauce
¼ cup butter
0.333 cup flour
2 cups milk
In addition
9 ozs Lasagne noodle (sheets)

Preparation steps

Peel and finely chop the onion and garlic. Peel the carrot, trim the celery and finely dice both. Thinly slice the mozzarella.

Heat the olive oil in a deep frying pan over a medium heat and fry the onions, garlic and mince. Add the carrots and celery and sweat briefly. Stir in the tomato puree and add the red wine and tinned tomatoes with their juice. Season with salt and pepper, then simmer for about 20 minutes.

For the béchamel sauce, melt 50 g butter in a pan. Stir in the flour and cook briefly. Gradually stir in the milk, then season with salt and pepper. Simmer over a low heat for 5 minutes, stirring constantly.

Preheat the oven to 200°C.

Put 2 - 3 tbsp of the béchamel sauce into a baking dish. Place a layer of lasagne sheets on top, followed by meat sauce, then more béchamel sauce. Repeat the process finishing with a layer of lasagne and a little béchamel sauce. Cover with a layer of mozzarella slices and sprinkle with grated Parmesan. Dot with butter and bake in the preheated oven for about 40 minutes.

Serve with a green salad.
