4 egg whites
1 Tbsp lemon juice
¾ cup powdered sugar
2 egg yolks
1 tsp Organic lemon zest
¼ cup Quark
2 Tbsps Corn starch

Preparation steps

1.
Heat the oven to 160°C (140°C in a fan oven), 325°F, gas 3 and grease and flour four mini souffle ramekins.
2.
Beat the egg whites gradually adding the lemon juice. Add 50 g icing sugar and beat until stiff and shiny. Split the mixture in half.
3.
Beat the egg yolks with the remaining icing sugar and the lemon zest and stir in the quark. Add half the meringue mixture, sieve in the cornflour and fold carefully together.
4.
Pour the mixture into the ramekins so they are 3/4 full. Place the remaining meringue gently on top and bake for 20-25 minutes until golden brown.
