- For the cake
- ⅔ cup butter (softened)
- 1 ¾ cups self-rising flour
- 1 ½ tsps Baking powder
- 1 cup caster sugar
- 3 large eggs
- 6 Tbsps milk
- 1 large Orange (finely grated zest)
- For the buttercream
- 1 cup unsalted butter
- 4 ½ cups powdered sugar
- vanilla extract
Preparation steps

For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a 900g|2lb loaf tin and line the base with non-stick baking paper.

Put all the cake ingredients into a mixing bowl and beat with wooden spoon for 3-5 minutes, until light and fluffy. Spoon the mix into the tin and level the top. Bake for 40-50 mins, until golden brown and firm to the touch.

For the buttercream: Beat the butter until soft. Sift in the icing sugar and beat until smooth and creamy. Beat in the vanilla.

Slice the cake horizontally into 3. Spread 2 pieces of the cake with buttercream. Reassemble the cake and spread the top with buttercream.

To decorate: peel the oranges with a vegetable peeler.

Heat the sugar and water in a pan until the sugar has dissolved. Bring to a boil and cook until golden brown, swirling the pan occasionally but do not stir. Add the orange zest and simmer for 10 minutes. Cool slightly. Spoon over the cake and leave to cool.
