- 1 ¼ cups all-purpose flour
- 0.333 cup fine Semolina
- 0.333 cup superfine caster sugar
- ⅔ cup butter (cubed)
- 1 lemon (zest finely grated)
Preparation steps

Preheat the oven to 180°C (160 fan) | 350°F | gas 4 and line a baking tray with greaseproof paper.

Mix together the flour, semolina and caster sugar in a bowl, then rub in the butter and lemon zest.
3.
Knead gently until the mixture forms a smooth dough then form into cylinder 6 cm in diameter. Slice the roll into 1 cm thick slices and spread them out on the baking tray.
4.
Bake the biscuits for 15-20 minutes, turning the tray round halfway through. Transfer the biscuits to a wire rack and leave to cool.
