- 4 Tbsps olive oil
- 14 ozs Asparagus (spears)
- 2 large Oranges (peeled and segmented)
- 1 shallot (chopped)
- ⅛ cup Noilly Prat
- 2 Tbsps Orange juice
- 1 pinch sugar
- salt
- freshly ground Black pepper
- Chicory (endive)
- 2 ½ ozs black Olives (pitted)
- 2 Tbsps chopped Pine nuts (toasted)

Preparation steps
1.
Heat the olive oil and quickly cook the asparagus and shallot. Deglaze with Noilly Prat and orange juice.
2.
Stir in the sugar, salt and pepper to taste and bring to a boil. Simmer gently to reduce slightly. Leave to cool.
3.
Arrange the chicory leaves and orange segments on serving plates with the asparagus and olives and sprinkle with pine nuts.
