Cinnamon Rice Pudding

In a large saucepan, bring water to a boil. Stir in rice, butter, and salt. Once butter is melted, cover saucepan and remove from heat. Set aside until water is absorbed, about 5 minutes.
Return the pot of rice back to medium heat and add milk, brown sugar, cornstarch, and vanilla extract into the rice. Bring to a simmer, stirring frequently for about 5 minutes.
Portion into serving dishes and sprinkle with cinnamon to serve.
