2 Tbsps olive oil
1 medium, green Bell pepper (seeded and chopped)
1 medium Red onion (chopped)
3 cloves garlic cloves (finely chopped)
2 lbs turkey breasts (chopped)
2 cups diced Tomatoes
1 ½ cups tomato puree
2 cups dark red Kidney beans (drained and rinsed)
2 ½ cups sweet Corn (frozen)
1 ⅔ cups Chicken broth
1 ½ cups dark beer (or stout)
2 Tbsps dark Chili powder
1 Tbsp ground Cumin
2 Tbsps salt
1 Tbsp Black pepper
1 Tbsp cayenne pepper
½ cup dark Molasses

Preparation steps

1.
In a large pot, heat olive oil over medium heat. Add bell pepper, onion and garlic. Sauté about 5 minutes, until onion is soft. Add turkey and cook, stirring occasionally and breaking up, until turkey is browned. Do not drain fat.

Add tomatoes, tomato puree, kidney beans and corn. Stir in broth and beer. Add the chili powder, cumin, salt, pepper and cayenne. Bring to boil, then reduce heat. Cover and cook for 30 minutes, stirring occasionally to prevent sticking or scalding.
3.
Stir in molasses. If the chili is too thick, add additional broth or beer. Cook 5 minutes. Taste and adjust seasoning as desired. Serve
