- 4 cooking Apple (quartered cored and chopped)
- 1 lemon (juice)
- 4 Tbsps brown sugar
- 1 Vanilla bean (cut in half)
- 4 Tbsps rolled oats
- 1 Tbsp low-fat spread
- 1 ⅛ cups low-fat Yogurt
- 1 tsp vanilla extract

Preparation steps
1.
Put the apples into a pan with the lemon juice, 2 tbsp sugar and the vanilla pod, cover and bring to the boil, then simmer for 5 minutes until the apples are tender.

Meanwhile put the rolled oats into a pan with 1 tbsp sugar and the low fat olive oil spread. Heat stirring for a few minutes until the the oats turn golden. Remove from the heat and leave to cool.
3.
Mix together the yoghurt with 1 tbsp sugar and the vanilla extract.
4.
Spoon the apple compote into glasses, add a layer of vanilla yoghurt and serve sprinkled with golden oats.
