- 2 Tbsps olive oil
- 1 onion (chopped)
- 1 stick Celery (chopped)
- 2 cloves garlic cloves (chopped)
- 1 tsp ground cinnamon
- 1 tsp Coriander
- 5 ¼ cups carrots (chopped)
- 4 cups vegetable stock
- salt
- peppers
- To garnish
- 4 Tbsps low-fat Crème fraiche
- ground cinnamon

Preparation steps
1.
Heat the oil in a large pan and gently cook the onion and celery until soft but not brown.
2.
Add the garlic, cinnamon and coriander and cook for 2 minutes, then add the carrots and stir well.
3.
Pour over the stock, bring to a boil, then season with salt and pepper and simmer for about20 minutes, until the carrots are very tender.
4.
Blend with a hand blender until smooth.
5.
Ladle into warm serving bowls and place a tablespoonful of creme fraiche on top. Sprinkle lightly with cinnamon.
