- For the cake
- ⅔ cup butter
- ½ cup xylitol
- 2 eggs
- 1 ½ cups all-purpose flour
- ¼ tsp salt
- 1 ¾ tsps Baking powder
- ¼ cup milk
- ¾ cup chopped Walnut
- For the buttercream
- 1 cup unsalted butter
- 3 cups powdered xylitol
- ¼ tsp salt
- 1 Tbsp vanilla extract
- 2 Tbsps cream (48% fat)
- To decorate
- chopped Walnut
Preparation steps
1.
For the cake: heat the oven to 180°C (160° fan) 350°F gas 4. Grease a23cm|9" cake tin.
2.
Beat the butter and xylitol in a mixing bowl until thick and creamy.
3.
Add the eggs one at a time and beat after each addition.
4.
Fold in the dry ingredients, then stir in the milk and walnuts.
5.
Spoon into the tin and bake for 30-35 minutes until golden and risen. Cool in the tin for a few minutes, then place on a wire rack to cool completely.
6.
For the buttercream: beat the butter until very soft and creamy. Sift in the xylitol and beat until smooth.
7.
Beat in the vanilla, salt and 2 tablespoons cream and beat for 3 minutes. If it is too thick, add more cream.
8.
Spread on top of the cake and sprinkle with chopped walnuts.
