- ¾ cup superfine caster sugar
- 1 Tbsp Corn starch
- 1 tsp White vinegar
- For the filling
- 5 ozs plain Dark chocolate (chopped)
- 3 Tbsps butter
- 3 eggs (separated)
- ¾ cup superfine caster sugar
- For the topping
- 14 ozs canned, black Cherries (drained)
- Whipped cream
- grated Chocolate
Preparation steps

Heat the oven to 150°C/130°C fan/300°F/gas 2. Line a baking tray with baking parchment. Put the egg whites into a bowl. Whisk until the mixed forms soft peaks. Gradually whisk in the sugar, a little at a time. Whisk in the cornflour (cornstarch) and vinegar. Shape the meringue into four mounds on the baking tray. Make a hollow in the centre of each one. Bake in the oven for 45 minutes. Turn the oven off and leave the door slightly ajar. Leave the meringues in the oven for a further 1 hour.

Put the butter and chocolate into a bowl over a pan of hot, but not boiling water. Stir gently until melted. Add one egg yolk at a time, stirring well between each addition. Remove the bowl from the heat and leave to cool.

Whisk the egg whites until the mixture forms soft peaks. Gradually whisk in the sugar. Gently fold the egg whites into the cooled chocolate mixture.

Spoon the chocolate mousse into the meringues. Top with the cherries, and whipped cream and scatter over the grated chocolate.
