125 grams sugar

300 grams Pastry flour

Preparation steps

1.

Beat the butter and sugar until fluffy then gradually stir in 6 eggs.

2.

Sift the flour and baking powder over the egg mixture and fold in along with the ground walnuts.

3.

Roll the dough out thinly, transfer to a greased baking tray.

Separate the remaining eggs. Whisk the egg yolks then brush over the dough. Bake in a preheated oven at 180°C (convection oven 160°C; gas mark 2-3) (approximately 350°F) for about 20 minutes.

5.

While still hot, cut the cookies into diamond shapes and let cool.

6.

Melt the chocolate over a hot water bath. Dip half of each diamond into the chocolate and garnish with 1 walnut half.
