1 ¾ cups all-purpose flour
¼ cup cocoa powder
1 Tbsp Baking powder
½ cup granulated sugar
2 fresh eggs (lightly beaten)
0.333 cup sunflower oil
1 cup milk
3 ozs solid Dark chocolate (chopped into small chunks)

Preparation steps

1.
Preheat the oven to 400°F. Line a standard muffin tin with paper or foil liners.
2.
Sift flour, cocoa and baking powder into a large mixing bowl. Stir in the sugar.
3.
In a separate bowl, whisk the eggs and oil until frothy, slowly whisk in the milk.
4.
Stir the egg mixture into the dry ingredients until just blended. Fold in the chocolate pieces.
5.
Spoon batter into the prepared muffin tin and bake for 20 minutes, or until cooked through and and springy to the touch. Cool in the muffin tin for 5 minutes. Transfer muffins to a wire rack to cool completely. Serve.
