- 1 cup Shredded coconut
- 14 ozs white chocolate (chopped)
- 2 Tbsps unsalted butter
- ½ tsp coconut extract
- ¼ cup powdered sugar

- 18 ozs Dark chocolate (70% cocoa solids, broken)

Preparation steps

Heat the cream and coconut in a pan and bring to a simmer. Remove from the heat, cover tightly and leave to stand for 30 minutes.

Melt the white chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat.

Bring the coconut cream to a simmer and pour into hot melted chocolate. Whisk until smooth and incorporated.

Add the butter and coconut extract and whisk until smooth. Cover and chill for 1-2 hours until firm enough to scoop.

Put the icing sugar in a shallow bowl, and dust your hands lightly with the sugar.

Use a teaspoon to form small balls from the mixture. Roll into balls. If the mixture becomes too soft to roll, return to the refrigerator to firm up. Place on non-stick baking paper.

Melt the plain chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Stir until smooth.
8.
Using a cocktail stick or fork, dip the balls in the melted chocolate and place on non-stick baking paper. Sprinkle with shredded coconut and leave to set.
