- ½ cup butter
- ¾ cup crunchy Peanut butter
- ¾ cup light brown sugar
- 1 egg (beaten)
- 1 tsp vanilla extract
- 1 cup all-purpose flour (heaped)
- 1 tsp Baking powder
- 1 cup roasted Peanuts (chopped)
- For the topping
- ¾ cup Dark chocolate (70% cocoa solids; chopped)
- ½ cup Crème fraiche
- 2 Tbsps light corn syrup
- 1 cup roasted Peanuts (chopped)
- 1 ¼ cups mixed white and plain Chocolate chip

Preparation steps
1.
Heat the oven to 170°C (150° fan) 325°F gas 3. Grease a 20cm|8" square baking tin.
2.
Beat together the butter and peanut butter in a mixing bowl until very soft.
3.
Add the sugar, egg and vanilla and beat until well combined.
4.
Sift in the flour, baking powder, stir gently until blended, then stir in the peanuts.
5.
Put into the tin and bake for 25–30 minutes, until golden and almost firm in the centre. Cool completely in the tin.

For the topping: melt the chocolate in a heatproof bowl over a pan of simmering (not boiling) water. Remove from the heat.
7.
Beat in the creme fraiche and syrup until smooth and shiny.
8.
Spread evenly over the cake and sprinkle with the peanuts and chocolate chips. Leave to set.
9.
Cut into squares to serve.
