4 Tbsps light soy sauce
2 Tbsps dry sherry
2 Tbsps Hoisin sauce
2 cloves garlic cloves (crushed)
1 ¼ inches freshly grated ginger (peeled and grated)
3 runny honey
18 ozs pork fillets
2 Tbsps sesame oil
4 scallions (finely sliced)
4 carrots (cut into thin sticks)
1 red pepper (deseeded and cut into thin strips)
2 cups Snow peas (sugar snaps)

Preparation steps

1.
Mix together the light soy sauce, dry sherry, hoisin sauce, garlic, ginger and 1 tbsp of the honey.

Put the pork into a bowl, pour on the marinade ingredients, mix well and marinate for 2 hours.
3.
Heat the oven to 190C (170C fan) 375F, gas 5. Half fill a roasting pan with water and rest a rack on top of the roasting tin.

Mix together the remaining 2 tbsp of honey with 1 tbsp sesame oil and 3 tbsp of the marinade.
5.
Put the pork onto the rack resting over the roasting tin and brush over the honey and marinade mixture.
6.
Roast for 15 minutes, brush over more of the honey marinade and roast for 20 more minutes until the pork is cooked.
7.
Meanwhile, heat the remaining 1 tbsp sesame oil in a skillet or wok. Add the scallions, carrots, pepper and snow peas and cook for 5 minutes until the vegetables are slightly softened but still crunchy.
8.
Bring the remaining marinade to a boil and reduce for 5 minutes.
9.
Slice the pork and serve on a bed of vegetables with a little of the marinade poured over.
