2 crayfish (Australian crayfish; about 230 grams, or 1 lobster 450 grams)
80 grams Chinese Pasta
600 milliliters fish stock
1 small garlic clove
1 shallot
2 Tbsps butter
1 Tbsp Noilly Prat
fresh cilantro
1 Tbsp Lime juice
Limes

Preparation steps

Rinse and brush the crayfish. Boil plenty of salted water and cook the crayfish (or lobster) in it for about 3 minutes. Place the crayfish in cold water and drain. Cut in half lengthwise and remove the meat from the carcasses using the scissors.

Peel the shallots, chop finely and saute in a pan in 1 tablespoon hot butter with crushed garlic. Stir in the vermouth and fish stock, bring to a boil, add the Chinese pasta and cook for about 5 minutes. Stir in the cilantro and lime juice, and season with salt and pepper.

3.

Heat the remaining butter in a pan and fry the crayfish meat in it briefly. Place the fried cryafish meat on a preheated plate, pour the soup with pasta, and serve garnished with lime slices and red bell pepper strips.
