- 1 handful Spinach
- 2 scallions (sliced into rings)
- ⅓ cup Bamboo shoots (from a jar)
- 1 ¼ cups sweet Chestnuts (pre-cooked)
- 1 Tbsp freshly grated ginger
- 1 Tbsp Coconut cream
- 2 Tbsps Oyster sauce
- 1 egg
- 20 sheets Dim Sum dough (food group) (or wonton wrappers)
- 2 Tbsps Nut oil

Preparation steps

Quickly blanch the spinach in salted, boiling water. Rinse in cold water, drain and squeeze out the excess moisture. Roughly chop. Add to a mixer together with the spring onions, bamboo shoots, chestnuts, ginger, coconut cream, oyster sauce and egg and blend to a fine purée. Season with salt and ground black pepper.

Lay out the pastry sheets and place around 1 tbsp of mixture in the centre of each one. Brush the edges with water and fold into semicircles. Press the edges together well. Cook the parcels in salted water for around 5 minutes.
3.
Remove from the pan and drain well. Heat the oil in a wok and fry the dim sum on both sides for 1-2 minutes until golden. Serve with soy sauce if desired.
