- 3 ½ ozs Glass noodles
- 2 sprigs mint (leaves removed and finely chopped)
- 2 ½ cups white Cabbage (finely chopped)
- 4 cups Bean sprout
- 2 garlic cloves (finely chopped)
- 2 Tbsps sesame oil
- soy sauce
- sugar
- 20 Spring roll dough sheet
- 1 egg (lightly beaten)
- Fat (for frying)

Preparation steps
1.
Cook the noodles according to the directions on the packet.
2.
Mix together the mint, cabbage, bean sprouts, garlic and oil.
3.
Drain the noodles and cut them into 4 cm strands. Add to the vegetable mixture and season with salt, ground black pepper, soy sauce and a pinch of sugar.

Remove 1 spring roll pastry sheet from the stack and spread around 2 tablespoons of the filling in the middle. Fold in the sides, brush the edges with the beaten egg and roll up. Do the same with the remaining pastry sheets.
5.
Fry the spring rolls in hot oil for 4-5 minutes until golden brown. Pat dry with kitchen paper and serve with soy sauce.
