- 1 slice white Bread (cubed)
- 2 ⅔ cups Tomatoes
- 2 red peppers (finely diced)
- 2 yellow Bell pepper (finely diced)
- 1 onion (finely diced)
- 1 Cucumber (seeded and finely diced)
- 2 cloves garlic cloves (minced)
- 1 ⅔ cups Tomato juice
- ⅔ cup vegetable stock
- 1 Tbsp lemon juice
- cane sugar
- salt
- cayenne pepper
- olive oil (for the ice cubes)

Preparation steps

Sprinkle ice cube moulds with pepper and fill to a depth of 3-5 mm with olive oil. Put into the freezer and freeze for about 2 hours.

Season the bread cubes with salt and soak in 4 tbsp lukewarm water. Drop the tomatoes into boiling water for a few seconds, then skin, deseed and dice.

Puree the soaked bread, tomatoes, garlic, diced peppers and cucumber with the tomato juice and vegetable stock. Add lemon juice, sugar, salt and cayenne pepper to taste and put into the refrigerator for about 1 hour.
4.
Take the ice cubes out of the freezer. Ladle the soup into bowls and serve with the olive oil ice cubes.
