Preparation steps
1.
Chop chiles finely and heat with the oil in a saucepan for about 10 minutes on low heat. Let cool and add cayenne pepper and vanilla bean.

Cover and infuse 1 day, then pour through a sieve and fill a sterile vessel. Is ideal for searing lamb or simply on toasted baguette.
