- 300 grams dried chickpeas
- salt
- 2 red Bell pepper
- 2 yellow Bell pepper
- 1 shallot
- 2 large Lettuce
- For Vnaigrette
- 2 Tbsps white balsamic vinegar
- 2 Tbsps Vegetable broth
- 2 Tbsps Corn oil
- freshly ground peppers
- sugar (to taste)
Preparation steps

Soak chickpeas in cold water overnight. Drain chickpeas the next day, rinse in cold water. Put chickpeas into a saucepan, season with salt and cover with water, bring to a boil and reduce heat. Cook for 1-1 1/2 hours on medium heat. Rinse peppers, cut in half, remove seeds and ribs, cut into 1 cm (approximately 0.5 inch) cubes. Peel shallot and chop finely. Rinse lettuce, remove hard stalks if necessary and tear into bite-sized pieces.

Prepare vinaigrette by combining vinegar with broth and oil. Season with salt, pepper and sugar. Combine chickpeas with peppers, lettuce and shallot. Toss with dressing and serve.
