- 1 chicken 1.2 kg (about 2.5 pounds)
- 1 onion
- 1 garlic clove
- 1 Tbsp butter
- salt
- peppers
- 150 milliliters dry white wine
- 4 centiliters Madeira Wine
- 4 Tomatoes
- 200 milliliters chicken stock
- 12 crayfish
Preparation steps

Rinse the chicken, pat dry and cut into 6 pieces. Peel the onion and garlic, dice the garlic and cut the onion into strips. Saute the onion and garlic together in hot butter in a pot or roasting pan until translucent. Add the chicken pieces and fry until golden brown. Season with salt and pepper and deglaze with wine and Madeira. Scald the tomatoes, peel, quarter, core and dice. Add the tomatoes to the chicken and pour a little broth. Cover and simmer for 30 minutes.

Place the crawfish in plenty of boiling salted water. Reduce heat and let simmer for about 10 minutes. Drain.

Remove the chicken and season the sauce. Serve the chicken and crawfish with sauce on the side.
