- 8 Chicken thigh (bone-in and skin-on)
- ½ cup olive oil (plus 1 tablespoon)
- 1 lemon (juice of)
- Sea salt (to taste)
- ground peppers (to taste)
- 2 green Bell pepper (sliced into chunks)
- 1 red Bell pepper (sliced into strips)
- 6 small new Potato (halved)
- 1 medium white onion (sliced into rings)
- 4 Italian sausage (sliced into rounds)
Preparation steps
1.
In a bowl, toss chicken thighs with the ½ cup of olive oil and lemon juice; season with salt and pepper and marinate 1 hour.

While chicken marinates, toss vegetables with olive oil, salt and pepper.
3.
Preheat oven to 375ºF / 190ºC.

Roast chicken in an oiled roasting pan with vegetables and sliced sausage, 20 to 25 minutes; flip and roast 10 more minutes.
5.
Serve on large platter.
