1 chicken (1.2 kg)
2 carrots
2 sticks Celery
2 onions
2 garlic cloves
4 Tomatoes
1 handful Spinach
2 Tbsps olive oil
½ tsp Turmeric
½ tsp ground Cumin
100 milliliters dry white wine
200 milliliters Chicken broth
2 Tbsps freshly chopped parsley
salt

Preparation steps

Rinse chicken, pat dry and cut into 8 pieces. Peel carrots. Cut the carrots and celery into large slices. Cut onions and garlic into small cubes. Rinse the tomatoes, cut into quarters, remove seeds and dice. Rinse, trim and coarsely chop the spinach.

Cook the chicken pieces in hot oil in a pot until golden brown. Add onion, garlic, turmeric and cumin, sauté briefly, then pour in the white wine and add some chicken stock. Add the carrots, celery and tomatoes and cook half-covered, stirring occasionally, until tender, about 30 minutes.

If necessary add extra broth. During the last 5 minutes of cooking, stir in the spinach and parsley. Season with salt and pepper.
