- 2 Avocados (not too ripe)
- 200 grams cooked chicken
- 200 grams cooked Rice (from the day before)
- 1 Tbsp scallions
- 1 Tbsp chopped parsley
- 50 grams almonds
- 125 grams pickled Pumpkin
- 6 Tbsps Orange juice
- 2 Tbsps lemon juice
- salt
- white peppers
- 1 pinch sugar
- Mayonnaise (from a jar)
- parsley (for garnish)
Preparation steps

Cut chicken into cubes. Chop almonds coarsely. Cut pumpkin into pieces.

Mix together chicken, rice, almonds and pumpkin, then fold in chives and parsley. For the dressing, whisk together orange juice and lemon juice and season with salt, pepper and sugar.

Halve avocados, remove pits and scoop out flesh with a spoon. Cut avocado flesh into small cubes and mix with dressing. Fold dressing into the chicken mixture. Fill avocado shells with chicken salad. Garnish each shell with a dollop of mayonnaise and some parsley to serve.
