4 Chicken breasts (approx. 150 g each)
5 tablespoons olive oil
1 red chile pepper (finely chopped)
1 organic Orange (juiced and zest grated)
1 teaspoon honey
2 Avocados (peeled, halved, pitted and diced)
4 scallions (cut into rings)
2 sprigs cilantro (roughly chopped)

Preparation steps

1.
Brush the meat with 2 tbsp oil and grill for 6-8 minutes. Turn twice and rotate on the grill so as to achieve a hatched strip effect. Season with salt.
2.
To make the salsa, mix together the chilli, orange juice and zest, honey, avocado and spring onions. Add the coriander, season with salt and serve on the chicken.
