14 ozs chicken breast fillets (without skin)
5 chili peppers (red and green)
2 garlic cloves
1 shallot
2 Tbsps Rice vinegar
2 Tbsps Lime juice
2 Tbsps honey
4 Tbsps soy sauce
6 ozs baby Spinach
½ bunch fresh cilantro
2 Tbsps sesame oil
12 sheets Rice paper (9-inch Ø)
1 Tbsp Sesame seeds

Preparation steps

Wash chicken breasts, pat dry and cook in plenty of boiling water for about 20-30 minutes.

Meanwhile, halve chili peppers lengthwise, remove seeds, wash, finely chop and place in a pot. Peel garlic and shallot, chop finely, and add. Add 8 ounces of water, vinegar, lime juice, and honey, bring to a boil and simmer for about 15 minutes. Then let cool and season with 1 tablespoon of soy sauce.

In the meantime, wash, clean and spin dry spinach. Wash cilantro, shake dry and pluck off leaves.

Remove chicken, drain, pat dry and cut into fine strips. Put meat in a bowl, mix with sesame oil and remaining soy sauce and let cool for about 7-10 minutes.

Meanwhile, place a kitchen towel on the work surface. Soak rice paper sheets one at a time in a bowl of warm water for 45-60 seconds. Remove, drain and lay side by side on the kitchen towel.

Place cilantro, spinach leaves and chicken meat in the center of each. Fold the rice paper sheets from the bottom over the filling and roll up so that the filling still peeks out a little. Arrange the finished rolls on plates, sprinkle with sesame seeds and serve with the sauce.
