- 4 boneless, skinless Chicken breasts (halves)
- ⅓ cup Pesto
- 1 vine ripened Tomato (sliced)
- 1 Cucumber (sliced)
- 2 cups Arugula (washed)
- 2 whole grain Bagel (halved and toasted)
- salt (to taste)
- peppers (to taste)

Preparation steps

Preheat oven to 400 degrees F.

Line baking sheet with aluminum foil. place chicken and pesto in medium bowl; toss to coat. Place chicken on the prepared baking sheet. Bake for about 20 minutes or until chicken is no longer pink in center. Remove from chicken from the oven. Slice chicken diagonally in a cross cut into 5 or 6 slices.

Place toasted bagel halves on 4 plates. Top with cucumber slices, tomato slices, sliced chicken breast, and arugula. Season with salt and pepper. Serve
