- 1 Eggplant
- salt
- 1 Zucchini
- 1 yellow paprika
- 1 red paprika
- 4 Chicken breasts (each 180 gram)
- 2 Tbsps chopped Fresh herbs (such as rosemary, parsley, basil, ...)
- 2 Tbsps olive oil
- 1 tsp lemon juice
- 1 tsp honey
- 4 Tbsps Herb butter (for serving)
- rosemary (for garnish)
Preparation steps

Preheat the oven broiler.

Rinse eggplant, cut in half lengthwise and cut into slices. Lightly salt eggplant pieces and leave for 10 minutes. Rinse zucchini, cut in half lengthwise and cut into slices. Rinse bell peppers, cut in half, remove seeds and ribs and cut into wedges.

Place chicken breasts in a bowl. Add herbs, oil, lemon juice and honey to the bowl and mix all ingredients well and cover chicken with honey mixture. Place chicken and prepared vegetables together on a baking sheet and cook under the preheated oven broiler, watching carefully, for 7-10 minutes, turning as necessary.

Serve chicken on warmed plates, place herb butter on chicken and garnish with rosemary.
