- 5 ozs Chicken breasts
- 1 Tbsp olive oil
- 1 onion (diced)
- 2 Tbsps butter
- 4 Tbsps all-purpose flour
- 1 cup milk
- 3 ozs cured ham (diced)
- Nutmeg
- 3 ozs breadcrumbs
- 2 eggs
- all-purpose flour (for the work surface)
- olive oil (for frying)
Preparation steps
1.
Fry the chicken in hot oil on a medium heat for around 10 minutes. Leave to cool.

Fry the onion in hot butter and sprinkle with 2 tbsp flour. Mix well and then add the milk. Simmer for 6-8 minutes until the mixture thickens.

Shred the chicken and the ham and stir into the sauce. Season with salt, ground black pepper and nutmeg and leave to cool. Once cool, chill in the fridge.

Sprinkle the remaining flour and the breadcrumbs onto two separate plates and beat the eggs in a bowl.

With floured hands, shape the mixture into 16-20 small croquettes. Roll in the four, drunk in the egg, and roll in the breadcrumbs.

Heat the oil in a large pan and fry the croquettes on all sides for 3-4 minutes until golden brown. Pat dry on kitchen paper and serve either warm or cold.
