- 2 Tbsps Peanut oil
- 4 cups Chicken breasts (cubed)
- ⅜ oz fresh ginger (grated)
- 2 cloves garlic cloves (crushed)
- ½ cup scallions (roughly chopped)
- 1 ½ cups Green beans (trimmed and halved)
- ¾ cup green peppers (deseeded and sliced)
- ¾ cup Celery (chopped)
- ⅔ cup chicken stock
- 2 Tbsps sweet Chili sauce
- 2 Tbsps light soy sauce
- ¾ cup Snow peas (mange tout)
- ½ cup frozen peas
- 1 green chili pepper (deseeded and chopped)
- 1 Tbsp finely chopped cilantro
- To garnish
- 2 cilantro

Preparation steps
1.
Heat the oil in a wok, add the chicken and fry for 2 minutes over a high heat.

Add the ginger and garlic, reduce the heat and fry for a further 2 minutes.
3.
Add the spring onions, beans, peppers, celery and the chicken stock, chilli sauce and soy sauce, cover and cook for 2-3 minutes more.
4.
Add the mangetout, peas and chilli and cook everything for 2-3 more minutes, shaking the wok now and again. Season with salt and ground black pepper. Add the chopped coriander leaves.
5.
Garnish with coriander leaves and serve.
