Preparation steps

For the shaved pears, rinse the pear and slice lengthwise into thin slices. Brush with lemon juice. Spread on a parchment-lined baking sheet, sprinkle with powdered sugar, cover with another sheet of baking paper and another baking sheet. Leave in an oven preheated to 80°C (approximately 175°F) until they have a "leathery" texture, about 2 to 3 hours. Remove the top baking sheet and the top layer of parchment paper. Turn off the heat in the oven and leave the oven door ajar. Let the pears cool in the oven.

Boil down the sour cherry juice with the cinnamon stick to 700 ml (approximately 3 cups). Remove the cinnamon stick and let cool.   Pour the juice into a shallow bowl and place in the freezer. Stir every 30 minutes with a fork so that no large ice crystals form for about 4 hours. Serve in bowls and garnished with pear chips.
