- 2 Red Bell pepper
- 1 onion
- 1 garlic clove
- 40 grams Blue cheese
- 2 hard-boiled eggs
- 1 tablespoon Dill (chopped)
- 1 tablespoon parsley (chopped)
- 200 grams Cottage cheese
- 2 Tbsps White vinegar
- 4 Tbsps Vegetable broth (instant)
- salt
- freshly ground peppers
- 1 pinch sugar

Preparation steps
1.
Rinse the peppers and cut in half lengthwise, leaving the stem undamaged if possible. Remove the seeds and pith.
2.
Peel the onion and garlic and chop very finely. Chop the blue cheese finely. Peel the eggs and chop. Mix all ingredients together with the herbs and cottage cheese.
3.
Whisk the vinegar, broth and sugar together and season with salt and pepper. Mix into the cheese mixture.
4.
Fill the pepper halves with the cheese mixture.
