cup Apple juice
1 ⅔ cups dry white wine
2 Tbsps sugar
1 lemon (juiced)
4 small Pear (peeled, halved and cored)
½ cup Blue cheese (e. g. Roquefort)
0.333 cup Quark
1 Tbsp cream
2 cups fresh Cranberry
1 Tbsp Maple syrup
1 handful young Lettuce
¼ cup Walnut (chopped)

Preparation steps

1.
Place the apple juice, wine, sugar and 3 tbsp lemon juice in a pot and bring to the boil. Add the pears and boil again. Simmer for two minutes, remove from the heat and leave to steep for around 10 minutes. Remove the pears from the pot and retain the liquid.

Mash the cheese with a fork and mix with the quark and the cream. Season with salt and ground black pepper and season with dash of lemon juice.

Transfer 100 ml of the pear mixture to another pot and add the cranberries. Simmer for around 10 minutes, stir in the maple syrup and remove from the heat.
4.
Arrange the lettuce on plate and fill each of the pear halves with 1 tbsp of the cheese mixture. Place the pears on top of the lettuce and sprinkle with the nuts. Add the cranberries around the edge and serve.
