Cheesy Pastry Bakes
Preheat the oven to 200°C | 400F | gas 6.
Roll out the pastry on a lightly floured surface to 0.5 cm thickness. Cut out 4 rounds of pastry from it, 10 cm in diameter.
Line four pastry cases with the pastry rounds. Prick the base and the sides with a fork.
Line the base of the tartlets with a layer of tomato slices, overlapping them. Cover with the slices of mozzarella and a sprig of rosemary. Season with salt and freshly ground pepper.
Bake in the oven for 20-25 minutes until the mozzarella is well melted. Serve hot.
