- 28 ozs fish fillets (e. g. cod, pollack)
- 2 Tbsps lemon juice
- 1 Red onion
- 1 clove garlic cloves
- 1 tsp butter
- ⅔ cup dry white wine
- 5 ozs Gruyere
- 1 ball Mozzarella (approx. 125 g | 0.5 cup)
- 1 cup breadcrumbs
- 2 Tbsps finely chopped Fresh herbs (rosemary, tarragon)
- salt
- freshly ground peppers
- fresh Tarragon

Preparation steps

Heat the oven to 180°C (160° fan) | 350F | gas 4.

Rinse the fish and pat dry. Cut into 4 pieces and drizzle lemon juice over the top. Peel the onion and the garlic and finely chop. Gently sauté in melted butter. Deglaze with wine.

Grate and add the cheese, saving 50 g of mozzarella for later. Now add the breadcrumbs and chopped herbs and season with salt and pepper.

Place the fish fillets in a greased ovenproof dish or 4 individual dishes and spread the cheese sauce over the top. Now sprinkle the rest of the mozzarella over the top and bake in the oven for 25 - 30 minutes. Garnish with fresh tarragon leaves and serve.
