This is a great dessert that is similar to a cheesecake, but it is a bit healthier, thanks to the addition of sour cream for some of the cream cheese and lower sugar content.

These tartlets are great for dessert or even as a decadent additiona to a special Sunday brunch.

Ingredients

For the base
4 Tbsps Shortbread
8 tsps melted butter
For the cheese mixture
6 sheets clear gelatin
9 ozs Sour cream
7 ozs cream cheese
3 ½ ozs sugar
¼ tsp vanilla extract
1 Tbsp lemon juice
7 Tbsps Whipped cream
For the fruit
1 ripe Mango (cut into strips)
5 ozs Blueberries

Preparation steps

Place the cookies in a freezer bag, crush into crumbs, and mix with melted butter. Line 4 small pudding molds approximately 3 inches in diameter with plastic wrap and cover with the crumb mixture.

Place in the refrigerator and leave to set.

Meanwhile, soak the gelatin in cold water. Stir the sour cream together with the cream cheese, sugar, and vanilla. Drain the gelatin and melt with the lemon juice in a saucepan over low heat (do not boil). Stir in 2 tablespoons of the cream cheese mixture and then combine with the remaining amount. Whip the cream, fold in and then spoon the mixture into the tart shells. Refrigerate for 3 hours to set.

Remove the tarts from the molds, garnish with mango slices and blueberries and serve.
