300 grams Pastry flour
1 tsp Baking powder
1 egg
200 grams butter
1 generous pinch cayenne pepper
Pastry flour (for work surface)
egg yolks (to brush)
Poppy seeds (to sprinkle)

Preparation steps

Finely grate cheese. Place flour on a flat work surface and add baking powder. Shape into a mound and make a well in center. Break egg into well and cut butter into flour mixture. Sprinkle cheese and cayenne over mixture and quickly knead into a smooth dough. Dough should not stick to hands. If necessary, add a little water or flour to dough. Roll into a ball, cover with plastic wrap and refrigerate for 1 hour.

Preheat oven to 175°C (approximately 350°F). Roll out dough on a floured surface until about 2-3 cm (approximately 1 inch) thick in a log shape. Cut slices that are 2-3 cm (approximately 1 inch). Place on a baking sheet lined with baking paper. If desired, make a design in top of biscuit. Whisk egg yolk and brush tops of biscuits and sprinkle with poppy seeds. Bake until golden brown, or about 10-15 minutes. Remove from baking sheet, cool and serve.
