Mushrooms are very low in calories but provide fiber and other nutrients such as vitamin D and copper. This tart also provides carbohydrates from the crust and protein from the bacon.
You can always buy storebought tart dough for easier preparation.

- For the Dough
- 1 ¼ cups flour
- ¼ tsp salt
- ¼ tsp Baking powder
- ¼ cup cream cheese
- 1 egg yolk
- 1 Tbsp cold water
- 1 ⅕ tsps Vinegar
- Filling
- 3 Bacon (minced)
- 4 shallots (diced)
- 1 clove garlic cloves (diced)
- 32 ozs Chanterelle
- 2 Tbsps dry Red wine
- 1 Tbsp Sage
- 1 tsp thyme
- 1 cup Roquefort cheese (crumbled)
Preparation steps

Preheat oven to 400° F/200° C. Line a baking sheet with parchment paper.

Mix all of the dough ingredients together and knead until well combined and smooth. Refrigerate for 30 minutes.

In a large skillet over medium heat add bacon, shallots, garlic and mushrooms. Saute for about 5 minutes, then pour in wine and herbs. Stir and continue to cook for another 3 minutes. Remove from heat and let cool.

Roll out the dough, and transfer it to the baking sheet. Sprinkle half of the cheese in a round layer on the dough. Spoon the mushroom filling on top and fold the edges up, crimping it little at the top. Sprinkle the remaining cheese over the top.

Bake for 30-40 minutes, until the crust starts turns golden. Serve warm and garnish with extra herbs if desired.
