- 28 ozs Chanterelle
- 1 onion
- 1 garlic clove
- 2 stalks parsley
- 1 tsp butter
- 1 Tbsp Pastry flour
- 5 ozs dry white wine
- 8 ozs Soy creamer
- salt
- peppers
- Nutmeg
- 2 Tbsps Sour cream
Preparation steps
Rinse and clean the mushrooms, if necessary. Peel the onion and garlic and chop finely. Rinse, dry, and chop the parsley.
Heat butter in a pan, and sauté the mushrooms over high heat for 3-4 minutes. Remove from the heat and set aside.
Sauté the onion and garlic in a pan over medium heat. Dust with flour, cook briefly and then stir in the wine. Add the soy cream and bring to a boil. Reduce the heat, and simmer for 5 minutes. Season to taste with the salt, pepper, and 1 pinch of grated nutmeg.
Stir in the mushrooms and sour cream. Season to taste, and sprinkle with parsley.
