- For the salad
- 1 Romaine lettuce (250 grams)
- 1 leaf Red cabbage
- 1 carrot
- ¼ Cucumber
- For the dressing
- 3 Tbsps balsamic vinegar
- 2 Tbsps lemon juice
- 1 Tbsp Mustard
- 2 Tbsps Whipped cream
- 6 Tbsps olive oil
- 2 sugar
- salt
- freshly ground peppers
- 1 Tbsp parsley
- For the chicken
- 400 grams Chicken breasts
- salt
- freshly ground peppers
- 2 eggs
- 4 Tbsps Pastry flour
- 100 grams clarified butter
- For serving
- 2 Tomatoes

Preparation steps

For the salad, rinse the lettuce, spin dry and tear into pieces. Cut cabbage into fine strips. Peel carrot and cut into fine sticks. Rinse cucumber and cut into thin slices.

For the dressing, whisk together vinegar, lemon juice, mustard, cream, sugar, salt and pepper and olive oil. Stir in the parsley.

For the chicken, cut chicken breasts lengthwise into wide strips, then season with salt and pepper. Put flour and beaten eggs on separate plates and dredge the chicken in flour, then in egg. In plenty of hot butter in a wide pan, cook chicken until golden. Remove, drain and cut into cubes.
Mix together salad, top with chicken and drizzle with the salad dressing. Rinse tomatoes, cut into wedges and garnish the salad.
