- 2 Chicken breasts
- 1 Tbsp vegetable oil
- 100 grams lamb's lettuce
- 1 smaller Frisée
- 4 slices white bread
- 100 grams scallions
- 1 Tbsp scallions
- 1 small red paprika
- 50 grams lingonberry
- 2 Tbsps vegetable oil
- 2 Tbsps Vinegar
- 1 Tbsp sugar
- salt
- freshly ground peppers
Preparation steps
1.
Season chicken breast with salt and pepper. Sauté in hot oil about 8 minutes. Wrap in aluminum foil and set aside.

Rinse and dry the lettuce. Tear into bite-size pieces.
3.
Rinse the scallions and cut into rings.
4.
Trim the crust off the bread. Cut bread into small cubes and sauté in hot oil until crisp.
5.
Rinse peppers, remove seeds, and cut into fine dice.
6.
Mix cranberries with the sugar.
7.
Combine vinegar with 3 tablespoons of water, add salt and pepper, and whisk in the oil. Add the cranberries and diced peppers.
8.
Cut chicken breast into small pieces and mix with the lettuce and scallion. Drizzle salad dressing on top, and serve sprinkled with croutons.
