- 75 grams Rye flour
- 125 grams Pastry flour
- salt
- 150 milliliters milk
- 100 milliliters mineral water
- 1 Celery root (600 g)
- salt
- freshly ground peppers
- 1 Tbsp lemon juice
- Pastry flour (to tack)
- 2 eggs
- clarified butter (for frying)
- 4 Tbsps Sesame seeds
Preparation steps

For the batter, mix together both types of flour with a pinch of salt, the milk and water and leave covered for about 15 minutes.

Peel the celery and cut into 0.5 cm thin slices (approximately 1/4 inch). Blanch in salt water for 2-3 minutes. Rinse and pat dry. Season with salt and pepper and drizzle with lemon juice.

Beat the eggs into the batter. Roll the celery in the flour and then dip into the batter. Shower with a little sesame seed and fry in some butter for 1-2 minutes until golden brown. Turn and fry the other side for 1-2 minutes.
One by one, fry all the battered celery. Drain on kitchen paper and serve immediately.
