12 ozs Cavatelli pasta (small spiral noodles)
salt
3 ½ ozs Pancetta
1 onion
2 garlic cloves
5 ripe Figs
4 Tbsps olive oil
1 Tbsp White vinegar
peppers
2 stalks mint
2 ozs pecorino romano

Preparation steps

Cook the cavatelli according to the instructions on the packet in plenty of boiling salted water until al dente. Pour into a sieve and drain, collecting about 4 tablespoons of the cooking water.

In the meantime cut Pancetta into small pieces. Peel onion and garlic and chop finely. Wash figs, dab dry and chop. Heat oil in a pan. Fry the pancetta, diced onion and garlic for 2-3 minutes over medium heat. Add figs and fry for 2 minutes. Add vinegar and the collected cooking water and season with salt and pepper.

Add the noodles and let everything simmer for 1 minute. Wash mint, shake dry, pluck leaves and cut into fine strips. Fold them under briefly, arrange the pasta on plates and rub the cheese over it.
