1 Cauliflower (800 grams)
1 Tbsp butter
100 milliliters dry white wine
600 milliliters Vegetable broth
1 organic Orange
400 grams Salmon (ready to cook)
salt
white peppers
2 egg yolks
100 grams Créme legére

Preparation steps

Rinse cauliflower and divide into florets. Heat butter in a saucepan and saute cauliflower florets for a few minutes. Deglaze pan with wine and broth and simmer for about 5 minutes on low heat. Rinse orange in hot water, grate zest and squeeze juice. Rinse and dice salmon. Add orange zest and juice to the pan and season with salt and pepper, add salmon and simmer for about 3-4 minutes on low heat. Whisk egg yolks with pastry cream until smooth. Whisk into soup and mix well.

Pour soup into bowls and serve.
