- 8 cups Cauliflower
- 2 Tbsps butter
- 1 ½ Tbsps all-purpose flour
- ⅞ cup milk
- ⅔ cup cream
- 2 cups Bergkäse cheese (freshly grated)
- Nutmeg (freshly grated)
- 2 scallions (finely sliced into rings)

Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and butter an oven-proof dish.
2.
Blanch the cauliflower in boiling salted water for 6-8 minutes. Drain, quench in cold water and drain well.
3.
Melt the butter in a pan, sprinkle in the flour, allow to colour slightly, stirring, then stir in the milk and cream. Continue stirring and simmer the sauce over a moderate heat for around 4 minutes. Stir in half of the cheese. Allow to melt, then season to taste with salt, ground black pepper and nutmeg.
4.
Arrange the cauliflower and spring onions in the dish and pour over the sauce. Sprinkle over the remaining cheese. Bake in the oven for approx. 20 minutes until golden brown and the cheese has melted.
5.
Take out of the oven and serve immediately.
