- 4 cups Pasta (e. g. casarecce)
- 2 Tbsps olive oil
- 1 clove garlic cloves (peeled, finely chopped)
- 2 large Zucchini (finely chopped)
- 2 Red onions (chopped into wedges, layers separated)
- 1 red pepper (seeds removed, chopped into 1 cm pieces)
- 6 Roma tomatoes (finely chopped)
- 1 cup cherry Tomatoes
- 1 Tbsp tomato puree
- 2 handfuls Arugula
- 2 cups Feta (crumbled)

Preparation steps
1.
Cook the pasta in plenty of boiling salted water until al dente.

Heat the oil in a pan and fry the garlic gently until transparent. Add the courgettes, onions and pepper and fry for a further 2-3 minutes. Mix in the tomatoes and cherry tomatoes, stir in the tomato puree and season with salt and ground black pepper. Simmer over a medium heat for approx. 3 minutes.

Drain the pasta and add to the vegetable sauce. Mix thoroughly.
4.
Arrange the pasta and sauce on plates. Sprinkle with rocket and feta to serve.
